Offal and variety meats often enter packing areas warm, wet, and variable in size and density. Conventional room cooling or air chilling can create bottlenecks, increase handling time, and delay pack-out.

Vacuum cooling is an ultra rapid pre-cooling process that removes heat by evaporating a small amount of surface moisture under reduced pressure, delivering fast, uniform temperature reduction across the load.

WHY USE VACUUM COOLING

Vacuum cooling lowers the pressure inside a sealed chamber. At reduced pressure, moisture evaporates at a lower temperature, carrying heat away from the product. Think of it as pulling heat out quickly using controlled evaporation, rather than waiting for cold air to penetrate the load.
